Stuffed Cauliflower Recipe

Ingredients
1 head of cauliflower – separated into flowerettes
½ lb. of Bacon fried crisp
6 oz. Cream Cheese – room temperature
¾ lb. bag of finely shredded Cheddar Cheese
Small container of Sour cream
4 Scallions thinly chopped
Directions
Boil cauliflower pieces in large pot of salted water until fork
tender.
Drain well. Grease 9x12 casserole dish with butter. Mash a few
flowerette’s and leave a few medium size pieces in original pot.
Meanwhile blend cream cheese, almost all cheddar cheese, sour cream,
almost all bacon, and almost all of the scallions. Pour mixture over
cauliflower, blend gently. Scrape mixture into casserole dish. Top
with
remaining cheddar cheese, bacon and scallions. Bake in 325* oven for
½ hour until cauliflower mix is hot and bubby. Enjoy!!! |
